Mediterranean cuisine – like its coastline – is sensuous, challenging, recognisably individual and the product of a long history. Who would be surprised then to learn that places as magical as Santorini (Home Page) also offer a cuisine to match? Whats more, the health-promoting effects of the Mediterranean diet have been the subject of many enquiries and reports over recent decades.
The link with yogurt here must be noted – nowhere has yogurt been so thoroughly incorporated into the local cuisine as in the countries of the eastern Mediterranean. In the west, yogurt is little more than a garnish whereas in countries of the eastern mediterranean, yogurt is frequently incorporated in savoury courses too. While the use of yogurt as a key ingredient in dishes, sauces, garnishes and beverages is well established in the region however, precise details of how the yogurt is prepared for use often remain within the family circle. One thing that distinguishes yogurt used in dishes such as:

Cacic (Turkey)
Raib (Algeria)
Laban-Rayab (Egypt)
Kos (Albania)


– is that it will have been made at home, especially in islands of the region.
If you want to taste non-dairy yogurt at its best – either on its own or as an ingredient – you really should copy the islanders of the eastern Mediterranean and make it at home; details for achieving this are included in later pages.
Non-dairy yogurt made from soya, almond and coconut have a more robust and individual taste compared to dairy yogurt, especially when prepared without the pre-treatment used for dairy milk yogurt. Excepting coconut yogurt, making any of these at home is possibly the easiest thing you can do in the kitchen after making a pot of coffee.
